After dropping almost $100 each week Sweet Green visits, I decided it was the time that I start to prep salads on Sunday’s. I make this one in a big salad bowl and pre-package my portions for the rest of the week. It’s a mock Sweetgreen salad with a little twist – goat cheese – the one thing I could never live without. This was on the summer menu, but now I can’t find it. Thank God I learned to make it, or I think I’d have gone insane waiting for it to come back.
Here’s what you’ll need:
1 Bag of Arugula
1 Box of Cherry Tomatoes
1 Container of Goat Cheese
1 can of black beans
1/2 Red Onion
1 Bottle of Trader Joe’s Cilantro Dressing
Cut the cherry tomatoes in half, dice the red onion, and add both to the bowl. When you’re done, mix the arugula, black beans, and goat cheese into the salad bowl.
Before eating, add the avocado and cilantro dressing. This way, the arugula leaves stay nice and crisp.
